Walter Dacon C’est Syrah Beaux, Aged in American Oak
Washington’s Walter Dacon Winery produces 1,000 cases of syrah per year. Lloyd Anderson started his winery in 2003 following his passions after a career in forestry. Lloyd learned his winemaking skills from the best while at McCrea Cellars, taking his skills much further employing European winemaking techniques not practiced elsewhere in the state. Following de-stemming, Lloyd uses frozen carbon dioxide to cold stabilize the syrah grapes, remaining true to Rhone style wines, he makes liberal use of blending. Walter Dacon wines exhibit tamed tannins and are much smoother than many other Washington syrahs. Chef Michael has created a small portions tasting menu to pair these unique wines with.
